FRESH APPLE AND WALNUT SALAD
This recipe is a great paired back with heavy meat dishes like Pulled Pork as a refreshing side!
Ingredients
⅓ Cup of Apple Cider Vinegar
1 Tablespoon of Brown Sugar
½ Tablespoon of crushed Fennel Seeds
1 Tablespoon of. Dijon Mustard
½ Head of Red Cabbage
2 Crisp Apples
¼ Large Red Onion, thinly sliced using the thinnest setting on the Mandolin Slicer
1 Hand full of coarsely chopped toasted Walnuts
1 Table Spoon of Extra Virgin Olive Oil
Instructions
Whisk together the vinegar, sugar, fennel, and mustard in a bowl. Season with Salt & Pepper.
Slice the apples using the Kitchen Gadgets 12mm Slicer. Toss the slices into the bowl with the ingredients and combine. The acid in the vinegar will actually prevent them from browning while you prepare the remaining ingredients.
Cut the cabbage half in half. Run the Kitchen Gadgets 68mm Peeler back and forth over the half cabbage to slice it into strips. This peeler works on both forward and backwards motions which makes it fast and easy to slice!
Slice the Red Onion on the thinnest setting using the Mandolin Slicer . Add this to the bowl and combine with the Olive Oil and walnuts.
Sprinkle with fresh sprigs of Dill and serve!
